I have always loved soups. Growing up my favorite was my grandpa’s beef stew, which didn’t have so much broth, but oh I loved the meat chunks and veggies. And the smell when we walked in the door was amazing! I knew exactly what was cooking and mouth began watering immediately. His stew also signaled that the cooler weather had officially arrived and holidays were on the horizon.
I also love potato soup. I have a fondness for all things potatoes, so it’s only natural to have this on my list. Of course, you’ll need some bacon to top it off! Another favorite of mine was always tortilla soup. I loved the flavors and chicken in the broth with the melting cheese and tortilla strips on top. Put a little lime in it and man it was delicious.
Sadly my kids are not as big on soups as I was, but I keep trying! Several of them love chicken noodle soup and tomato soup (so long as we have grilled cheese with it), but most of the time they are happy without it. My husband on the other hand, loves soup and loves trying different foods from around the world.
With cooler weather here I was prompted to check out some soup recipes. We love making them for easy lunches or dinners on the weekend when we want to relax a little more. I couldn’t believe all the different recipes I found. So of course, I gathered them up for you too!
